Interning at Mon Atelier
By interning at a high-end Italian restaurant in the heart of Shibuya, I discovered that there was much more to restaurant work than I had expected. Through customer service training, restaurant operations, a chef presentation, and hands-on pasta making, I learned about hospitality, teamwork, and the attention to detail required to create a memorable experience for customers.
Understanding Hospitality
One of the biggest things I learned was that good hospitality is about much more than simply being polite. I learned how important it is to pay attention to customers and notice what they might need before they ask. The head waiter especially stood out to me because he explained the dishes carefully, answered customers' questions, and even took the time to learn about wine so he could make better recommendations, despite not personally liking wine. This showed me that good hospitality means thinking from the customer's perspective and putting effort into the small details that can make their experience special.
Behind the Scenes
The internship also showed me how much work goes into running a restaurant that customers never see. Staff members have to prepare the restaurant, set tables, manage reservations, prepare and serve food, clean, and communicate with the kitchen. I was surprised to learn that the menu can change depending on the ingredients available that day and what is in season. I also learned that the staff pay attention to customers' reactions and use their feedback to help shape future menus. Seeing all of this gave me a completely different perspective on what happens behind the scenes of a restaurant.
Culinary Skills & Teamwork
I really enjoyed learning about the culinary side of the restaurant, especially making pasta. I learned how small details, such as adding garlic first to build flavor and carefully spinning the pasta when plating it, can make a difference. I was also surprised by how much technique and knowledge went into creating each dish. The chef demonstrated techniques that I had never seen before, including how oil and water can be combined to create a creamy texture. At the same time, I learned that restaurant work requires strong teamwork. Everyone has different responsibilities, but they have to communicate and support each other to make sure everything runs smoothly.
Reflection
This internship changed the way I think about restaurants. I realized how much preparation, knowledge, communication, and attention to detail are required to create the experience that customers see. I also challenged myself by handling hot and heavy plates and communicating with adults I had never met before. My favorite part was making pasta, but my biggest takeaway was learning to notice the small details that I would normally overlook as a customer. I am also very grateful for the wonderful team at Mon Atelier and I will carry this greater awareness of hospitality, teamwork, and attention to detail with me into future experiences.
